Egg Muffins!

Since starting crossfit and trying to eat as close to Paleo as possible, I have been eating a lot of eggs. To the point where they were getting old! I decided to try and throw some ingredients I had on hand together and the result was amazing! I am in love with Jimmy Dean Precooked sausage crumbles! Eat it everyday! No mess, just warm up, and throw in with my eggs. More protein! I haven't tried the turkey crumbles, as I am just not big into turkey. To make the egg muffins you will need:

1 dozen eggs
dash of milk
Seasonings of your choice (pepper, salt, garlic powder)
1/2 a bag of sausage crumbles
veggies of your choice. I used yellow peppers.
Shredded Cheese

I mixed all the ingredients together and then spooned them into a greased muffin pan. I didn't have any cooking spray, so I used muffin tins. They turned out fine, but were hard to get out of the wrapper. I would spray them too. I cooked them at 350 degrees for 20 minutes. The recipe made 18. I froze 6 for mornings on the run. Enjoy!

As my husband is deployed, my older boys have to step up and help around the house. This is not met without whining and complaining. I have been struggling with finding fun ways to get them motivated. I was doing my nightly Pinterest searching, and came across a "chore card". I thought that would be completely exciting for my boys and they can compete. Even better! I have designed a chore chart. It would be great for any child, but I think perfect for the military child. Make it fun by letting them have a reward when they finish a row, or a whole card. I can't wait to hear how the card works for your kiddos!

Laundry Room

I was hard at work yesterday. Although I didn't get everything done, I feel so much better. I sacrificed my last hour for Skype time with the hubby in the middle of the day. I said I'd share some before and after photos! I have plans to change up the shelving, add a hanging rack, and do some painting. I changed up the printable with this cute one I found on Pinterest.

Bathtub Turned Ball Pit!

Our little man was getting to big for his inflatable tub. I have been looking for a way to keep him corralled and busy! I bought a pack of 100 balls from Target and filled his old tub for a cheap ball pit! So far it is a hit!

Our Week

We are a few days until AJ gets home. As you can see, we have been busy. Graycen started to sleep through the night! I really think its the Zantac making the difference. I am also switching him to milk. He got his first taste of ice cream this week! I think I created a monster! He also shared some of my pizza! You can see he is a good eater!
AJ has been back in service areas. It's been wonderful to talk nightly and get a few Skype dates.
Keegan signed up for his 8th grade trip. He will go to DC next year. Our baby will fly and stay in a hotel without us! I thought about going, but it is a huge expense right now!
Brayden finally got to play his favorite board game! I got a little umbrella Pinterest project done. I've been working on my grad school essay!
Back to my to do list. Eek few more days until our little break!

1st Birthday Prep

We have just a few weeks until we will celebrate G's first birthday. I have family and birthday pictures scheduled right before the party. Here are a few ideas I have for photos. Of course we are going to do the tradional cake smash too!

Dinner Tonight- Creamy Chicken and Rice

Dinner tonight!




My wonderful friend made this casserole and sent it over a few weeks ago. We ate it all! I need a quick chicken recipe for tonight... so I decided to recreate it tonight! Make sure you pin it on your meals to try!

Lacking Motivation

I don't know if it has been the weather or what... but I have clearly been lacking motivation the past few days. G has been sleeping better ( just getting up once). However, we were up at 5:30, and both back asleep in the chair at 6:15. Keegan's basketball season has come to an end. Yeah! We know have more time in the evenings. But, Brayden's is just beginning but won't be as intense. I have been fighting a pinched nerve in my neck that has moved down my back. So far today,  bit better. So, the whole working out thing has taken a back seat for a few days. Hoping to get back in the pool this evening and take the boys.

I must find some motivation to get my house in order. I am hosting a girls night Favorite Things Party on Friday. Whatch for photos and details on my own this weekend!


 Projects I need to tackle this week:

* Clean up my desk.
* Go through fridge
(I am dreaming my fridge will someday look like this.) Containers on the to buy list!

* Organize my clothes
* Work on garage organization.
This is something I hope to have done by the end of next week! Everyone just comes in and drops everything by the door. Shoes need to stay outside, because we have a shoe eating monster these days!

Care Packages

I will be the first to admit, I LOVE putting to care packages for AJ when he is away. I am not the most creative care package assembler, but I get such a rush from finding fun things to put in his box. The best thing that ever happened to the care package was the Flat Rate Box! I love that I can stuff it full and still pay $10.95! My goal for this deployment's packages is to find a fun and creative way to assemble them. Pinterest has been a great resource and my creative juices are flowing! Check out my deployment "pins"!

Crockpot Chicken Fajitas

I made chicken fajitas in the crockpot tonight . So quick, easy, and all boys ate it even G! I just threw 3 large chicken breasts, a packet of fajita seasoning, 1/2 cup of water, 3 bell peppers, and 1/2 an onion in the crockpot on 6 hours. I drained a little liquid before serving, otherwise the chicken was juicy and delicious ! I served it with fresh guacamole and salsa. Yummy!

Valentine's Day- Printables

I woke up ready to start putting Christmas stuff away. I am slowly putting up Valentine's Day stuff. I found some great printables! I love the first one as it is adapted from one of my favorite book, Love You Forever. You can copy and paste the printable here. I copied it and opened it and stretched it in a Word document.

The second printable came from Becky Higgin's Site (Project Life). You can download several sizes here!
