We have been busy getting ready for Easter. A yearly tradition my Mamaw started with me, was making our yearly Lamb Cake. I have perfected it over the past years and have assembled two this year with ears in tact. There isn't much to it really. A box of pound cake mix and a lamb cake mold. No other cake is sturdy enough. ( We have tried.) Mix the cake per the box instructions and fill one side with the cake. It got a little browner then usual, but my oven was really warm from making bread. I would bake it on 350 instead of 375 per the box. It should bake for one hour. When it is cool, you can pop the cake out of the mold. We use cream cheese frosting and coconut for the wool. A little green coconut for grass and jelly beans for eyes and decorations!
